  • 1/2 cup (113g) Unsalted Butter, melted and slightly cooled
  • 2 large Eggs, room temperature
  • 1 teaspoon Vanilla Extract
  • 3 medium Apples, chopped (mix of tart and sweet varieties)
  • 1/2 cup Granulated Sugar (for topping)
  • 1 tablespoon Cinnamon (for topping)
  • 1 cup Powdered Sugar (optional glaze)
  • 23 tablespoons Milk or Cream (optional glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper and grease lightly.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk melted butter, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently with a spatula until just combined. Do not overmix.
  5. Fold in chopped apples gently to distribute evenly without crushing them.
  6. Mix topping ingredients (1/2 cup sugar and 1 tablespoon cinnamon) in a small bowl.
  7. Pour batter into prepared pan and smooth the top. Sprinkle cinnamon sugar topping evenly and press gently to adhere.
  8. Bake for 50-60 minutes. Tent with foil if browning too quickly. Test with a toothpick; it should come out clean or with moist crumbs.
  9. Cool in pan for 10 minutes, then lift out using parchment sling and cool completely on a wire rack.

Notes

Do not overmix the batter to avoid tough gluten development. Ensure eggs are at room temperature for better emulsification. If baking in a humid climate, add 5-10 minutes to baking time. Can be made gluten-free with a 1-to-1 flour blend. For muffins, bake for 20-25 minutes.
