Cozy Crockpot Lasagna Soup with Ricotta

A comforting, slow-cooker version of lasagna that captures all the flavors in a bowl without the layering hassle. Rich with ground beef, marinara, and dollops of creamy ricotta.

  • 1 pound 80/20 ground beef
  • 1 jar (24 oz) marinara sauce
  • 2 cups beef broth
  • 1 medium yellow onion, diced
  • 34 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 810 lasagna noodles, broken in half
  • 15 ounces full-fat ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Freshly grated Parmesan cheese, for topping
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks. Drain excess fat if necessary.
  2. Add diced onion to the meat and cook until soft. Add minced garlic in the last minute to prevent burning.
  3. Transfer the meat mixture to a 7-quart slow cooker. Add the marinara sauce, beef broth, and Italian seasoning. Stir to combine.
  4. Boil lasagna noodles in salted water for 1-2 minutes less than al dente. Drain, rinse with cold water, and break into halves.
  5. Add the broken noodles to the slow cooker and stir gently to submerge them in the liquid.
  6. Cover and cook on High for 3 hours or Low for 4-5 hours, until noodles are tender.
  7. In the last 15 minutes of cooking, dollop spoonfuls of ricotta cheese on top and sprinkle with half the mozzarella. Do not stir yet.
  8. Cover and let sit on High for the final 15 minutes to melt the cheese.
  9. Stir gently before serving to mix the creamy cheese into the broth. Top with Parmesan and serve hot.

Notes

Do not skip browning the meat for better flavor. Undercook noodles slightly before adding to the pot as they will finish cooking in the soup. If the soup is too thick after sitting, add extra broth or water when reheating. For freezing, freeze without cheese and add fresh cheese upon reheating.
