A creamy, comforting white chicken chili made in a slow cooker with simple pantry ingredients like chicken, white beans, green chilies, and cream cheese. It’s an easy, foolproof recipe perfect for cold nights.

  • 2 pounds boneless, skinless chicken breasts
  • 2 cans (15 oz each) Great Northern beans or cannellini beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies, undrained
  • 32 ounces (4 cups) low-sodium chicken broth
  • 1 large yellow onion, diced
  • 4 cloves fresh garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 8 ounces full-fat cream cheese, cut into cubes
  • 1 cup Monterey Jack or Cheddar cheese, shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the aromatics by dicing the onion and mincing the garlic. Optionally, sauté the onions in olive oil until translucent (about 5 minutes), then add garlic for the last minute.
  2. Add the chopped onions, garlic, drained white beans, diced green chilies (with their juice), and chicken broth to the slow cooker. Stir gently.
  3. Place the chicken breasts on top of the bean mixture. Sprinkle cumin and chili powder over the chicken.
  4. Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is tender and reaches an internal temperature of 165°F.
  5. Remove the chicken from the pot and shred it using two forks or a hand mixer. Return the shredded chicken to the pot.
  6. Add the cubed cream cheese to the hot chili. Stir continuously until the cream cheese is completely melted and incorporated.
  7. Taste and season with salt and pepper as needed. Serve hot, topped with shredded cheese, cilantro, and a squeeze of lime.

Notes

If using frozen chicken, add 30-60 minutes to the cook time. For a thicker consistency, mash some beans against the side of the pot. Do not freeze with cream cheese added; add fresh upon reheating. For a dairy-free version, substitute cream cheese with a dairy-free alternative or coconut milk.
