  • 1 medium yellow onion, finely diced
  • 2 cloves fresh garlic, minced
  • 1 (15-ounce) can beef chili (thick consistency, no beans)
  • 2 cups sharp cheddar cheese, shredded
  • 8 ounces cream cheese, softened
  • 2 stalks green onions, sliced thinly
  • Tortilla chips for serving
  • Hot sauce (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a 10-inch cast iron skillet over medium-high heat, cook ground beef and diced onion, breaking beef into crumbles, until browned and onion is soft (5-7 minutes). Drain excess grease, leaving about 1 tablespoon.
  3. Stir in minced garlic and cook for 30 seconds until fragrant. Add the can of chili and simmer on low heat for 5 minutes to thicken.
  4. Remove skillet from heat. Stir in softened cream cheese until smooth and creamy (2-3 minutes).
  5. Sprinkle shredded cheddar cheese over the top. Place in oven for 5-10 minutes or cover on stovetop for 5 minutes until cheese is melted.
  6. Gently stir to combine. Garnish with sliced green onions and serve immediately with tortilla chips.

Notes

Use block cheddar and grate it yourself for the best melt; pre-shredded cheese contains anti-caking agents that prevent smooth melting. Ensure cream cheese is softened to room temperature to avoid lumps. If the dip separates, whisk in a splash of cold milk or cold cream cheese over low heat to re-emulsify.
