Creamy Homemade Salted Caramel Pumpkin Syrup

A rich, velvety homemade syrup combining salted caramel and pumpkin spice, perfect for enhancing coffee, lattes, or hot chocolate with a comforting autumn flavor.

  • 4 tablespoons unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup heavy cream
  • 1/2 teaspoon sea salt
  • 1/2 cup 100% pure pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/4 cup water
  • 1 teaspoon pure vanilla extract

Instructions

  1. Melt the butter in a small saucepan over medium-low heat until liquid and foamy, taking care not to let it brown.
  2. Add the brown sugar and stir constantly with a whisk until it forms a thick, wet sand-like paste.
  3. Slowly drizzle in the heavy cream while whisking vigorously. The mixture will bubble and steam; continue whisking until smooth and glossy.
  4. Increase heat to medium and simmer gently for 5 minutes, stirring frequently, until the mixture thickens slightly and coats the back of a spoon (aim for 220°F/104°C if using a thermometer).
  5. Remove the pan from heat and stir in the cinnamon, ginger, nutmeg, and cloves to bloom the spices.
  6. Add the pumpkin puree and water, returning the pan to low heat. Stir constantly for about 3 minutes until fully combined and smooth.
  7. Remove from heat again and stir in the vanilla extract and sea salt. Taste and adjust salt if needed.
  8. Let the syrup cool in the pan for 10 minutes to thicken, then pour into a glass jar for storage.

Notes

If the syrup gets too thick in the jar, microwave for 15 seconds or stir in warm water to loosen. Store in the refrigerator for up to two weeks. For a dairy-free version, substitute butter with coconut oil and cream with full-fat coconut milk. Ensure you use 100% pure pumpkin puree, not pumpkin pie filling.
