  • 2 large eggs, room temperature

  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 4 oz cream cheese, softened (full-fat)
  • ¼ cup butter, softened
  • 1 ½ cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk or cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan thoroughly, optionally lining with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until pale and fluffy.
  3. Add eggs one at a time, beating well after each addition. Mix in the pumpkin puree and vanilla extract.
  4. In a separate bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture on low speed until just combined. Do not overmix.
  6. Spread the dough evenly into the prepared pan and press down flat.
  7. Bake for 20-25 minutes until edges are golden brown and the center springs back lightly. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. While bars cool, beat the cream cheese and ¼ cup butter until smooth. Add powdered sugar, vanilla, and milk. Beat on medium-high for 2 minutes until fluffy.
  9. Spread icing over the completely cooled bars. Let set for 15-20 minutes before slicing.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Ensure ingredients are at room temperature for best texture. Spoon and level flour to avoid dry bars. Cool bars completely before icing to prevent melting.
