A cozy, creamy overnight oatmeal that captures the flavor of a pumpkin spice latte without the coffee. This easy, make-ahead breakfast is perfect for busy mornings and fall weather.

  • 1 cup (90g) Old-Fashioned Rolled Oats
  • 1/2 cup (120g) Unsweetened Pumpkin Puree
  • 1 1/2 cups (360ml) Milk of Choice (dairy, almond, or oat milk)
  • 1 tsp Vanilla Extract
  • 2 tbsp Maple Syrup
  • 1.5 tsp Pumpkin Pie Spice
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 1 tbsp Chia Seeds (Optional)

Instructions

  1. In a mixing bowl, combine the rolled oats, chia seeds, pumpkin pie spice, cinnamon, and salt. Whisk until evenly distributed.
  2. Pour in half the milk and whisk the pumpkin puree into the dry mix to prevent lumps. Add the remaining milk, vanilla extract, and maple syrup.
  3. Stir the mixture vigorously to ensure oats are fully submerged and ingredients are well combined.
  4. Divide the mixture evenly among prepared jars or containers.
  5. Seal the containers tightly and refrigerate for at least 4 hours, preferably overnight.
  6. In the morning, stir the oats well. If the mixture is too thick, add a splash of extra milk to reach desired consistency.
  7. Serve cold straight from the fridge or microwave for 1-2 minutes to warm up.

Notes

Do not use pumpkin pie filling; use 100% pure pumpkin puree. Steel-cut oats do not work well for this recipe as they remain too chewy. For a protein boost, stir in vanilla protein powder after mixing, adding extra milk if needed. Store in the refrigerator for up to 5 days.
