creamy slow cooker beef stroganoff - featured image

A rich, velvety beef stroganoff made in a slow cooker with tender chuck roast, earthy mushrooms, and a creamy sour cream and egg yolk sauce. This recipe solves the common issue of curdled dairy by using a specific tempering technique for a smooth, restaurant-quality result.

Ingredients

Scale
  • 2–3 pounds beef chuck roast, trimmed and cut into 1-inch cubes
  • 1 cup low-sodium beef broth
  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 ounce dried porcini or cremini mushrooms, rehydrated and chopped
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 cup full-fat sour cream
  • 1 tablespoon all-purpose flour
  • 2 large egg yolks, beaten
  • 12 ounces wide egg noodles, cooked
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat beef cubes dry and cut into uniform 1-inch pieces.
  2. Sear beef in a skillet with oil until browned on all sides (optional but recommended for flavor).
  3. Transfer seared beef to a 6-quart slow cooker.
  4. Add diced onion, minced garlic, rehydrated mushrooms, beef broth, Worcestershire sauce, Dijon mustard, and smoked paprika. Stir to combine.
  5. Cover and cook on low for 7-8 hours until beef is fork-tender.
  6. In a small bowl, whisk sour cream and flour until smooth.
  7. Temper the sour cream mixture by slowly whisking in about half a cup of hot cooking liquid from the slow cooker.
  8. In a separate bowl, whisk egg yolks, then slowly stream in the tempered sour cream mixture.
  9. Pour the combined mixture back into the slow cooker and stir gently.
  10. Turn slow cooker to high and cook for an additional 10 minutes, stirring occasionally, until sauce thickens and becomes glossy. Do not boil.
  11. Turn off heat and let rest for 5-10 minutes.
  12. Serve over cooked wide egg noodles, garnished with fresh parsley.

Notes

Do not add sour cream or egg yolks at the beginning of cooking as they will curdle. Always temper dairy by slowly mixing in hot liquid before adding to the pot. If freezing, omit dairy and egg yolks before freezing; add fresh upon reheating. For gluten-free, use GF flour or cornstarch and ensure broth/Worcestershire is GF.
