A hearty, 30-minute comfort food soup that uses wild rice and a blend of fresh and dried mushrooms to create a rich, creamy texture without relying solely on heavy cream.

Ingredients

Scale
  • 1 cup uncooked wild rice blend (wild and brown rice)
  • 8 ounces cremini or button mushrooms, sliced
  • 1 ounce dried porcini mushrooms
  • 1 cup hot water (for rehydrating porcini)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 4 cups low-sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • 1 dried bay leaf
  • Salt and black pepper to taste

Instructions

  1. Place dried porcini mushrooms in a bowl and pour 1 cup of hot water over them. Let sit for 15-20 minutes to rehydrate.
  2. Remove the softened porcini mushrooms, chop them finely, and set aside. Strain the soaking liquid through a fine-mesh sieve to remove grit and reserve it.
  3. In a large pot, combine the wild rice, reserved mushroom soaking liquid, and enough water or broth to cover the rice by an inch. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until tender.
  4. While rice cooks, heat butter in a skillet over medium heat. Add chopped onion and a pinch of salt, cooking for 5-7 minutes until soft and translucent.
  5. Add minced garlic to the onions and cook for 1 minute until fragrant.
  6. Add sliced cremini mushrooms to the skillet. Cook for 8-10 minutes, allowing them to release moisture and brown nicely.
  7. Once rice is tender, add the sautéed mushroom mixture, chopped dried porcini, fresh broth, and thyme to the pot. Stir to combine.
  8. Bring the soup to a gentle simmer and cook for 10 minutes to meld flavors. Adjust seasoning with salt and pepper.
  9. Reduce heat to low and stir in heavy cream. Warm through for 2-3 minutes without boiling.
  10. Remove the bay leaf. Ladle into bowls and garnish with fresh parsley or black pepper if desired.

Notes

Do not skip browning the mushrooms for maximum flavor. Wild rice takes longer to cook than white rice, so ensure it is tender before adding other ingredients. If the soup is too thick after storing, add more broth when reheating. For a dairy-free version, substitute butter with olive oil and heavy cream with coconut or cashew cream.
