Crispy Apple Butter Baked Brie

A warm, comforting appetizer featuring a wheel of brie wrapped in flaky puff pastry and filled with sweet apple butter and fresh thyme, baked until golden and gooey.

  • 1 sheet puff pastry, thawed
  • 1 wheel Brie cheese (810 oz)
  • 1/2 cup apple butter
  • 1 tablespoon fresh thyme leaves
  • 1 large egg, beaten (for egg wash)
  • Pinch of flaky sea salt
  • Optional: 1/4 cup chopped walnuts or pecans, toasted

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Remove Brie from packaging and pat dry. Place on a cutting board.
  3. Spread apple butter evenly over the top of the Brie, leaving a small border. Sprinkle with fresh thyme leaves and press gently.
  4. Roll out puff pastry into a 12×16 inch rectangle on a lightly floured surface.
  5. Place Brie (top-side up) in the center of the pastry. Fold sides up and over the cheese, trimming excess pastry. Press edges firmly to seal, ensuring no gaps.
  6. Flip the wrapped Brie over so the seam is on the bottom.
  7. Brush the top of the pastry with beaten egg. Score a pattern on top with the back of a knife.
  8. Bake for 15-20 minutes until puffed and deep golden brown.
  9. Remove from oven and sprinkle with flaky sea salt.
  10. Let rest for 5 minutes before slicing and serving warm.

Notes

Ensure the pastry is fully thawed and pliable. Keep the cheese and pastry cool until baking to maintain flakiness. Do not skip the resting time, as the cheese will be molten hot. If the kitchen is warm, chill the wrapped brie for 10 minutes before baking.
