Crispy Easy Corn Dog Muffins

A quick and easy baked alternative to traditional deep-fried corn dogs, combining sweet cornbread batter with savory hot dogs in a muffin tin for a perfect sweet-and-salty snack.

  • 1 cup yellow cornmeal (fine-to-medium grind recommended)
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup milk (whole milk or buttermilk)
  • 1/4 cup vegetable oil or melted butter
  • 6 to 8 standard hot dogs, cut into thirds or halves
  • Wooden toothpicks
  • Cooking spray or butter for greasing muffin tin

Instructions

  1. Preheat oven to 400°F (200°C) and generously grease a 12-cup muffin tin with cooking spray or butter.
  2. In a medium bowl, whisk together cornmeal, flour, sugar, baking powder, and salt until combined and lump-free.
  3. In a separate bowl, whisk eggs, milk, and oil (or melted butter) until uniform and slightly frothy.
  4. Pour wet ingredients into dry ingredients and stir gently with a spatula until just combined; do not overmix.
  5. Cut hot dogs into thirds or halves and insert a toothpick into each piece.
  6. Place a teaspoon of batter in the bottom of each muffin cup, then dip each hot dog piece into the remaining batter to coat evenly.
  7. Place battered hot dogs upright in the muffin cups, pressing slightly into the batter.
  8. Bake for 15-18 minutes until golden brown and a toothpick inserted into the batter comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely or serve warm.
  10. Remove toothpicks before eating.

Notes

Ensure cornmeal is fresh to avoid bitterness. Do not overfill muffin cups as batter expands. For extra crispiness, brush tops with oil or butter after baking. Can be frozen for up to 2 months and reheated in an air fryer or oven.
