Ingredients

  • Boneless, skinless chicken breasts (pounded thin)
  • Fresh jalapeños (minced, seeds removed for less heat)
  • Full-fat cream cheese (softened)
  • Sharp cheddar cheese (grated)
  • Bacon (cooked and crumbled)
  • Panko breadcrumbs
  • Eggs (beaten)
  • All-purpose flour
  • Garlic powder
  • Onion powder
  • Salt and pepper
  • Paprika
  • Neutral oil for frying (vegetable or canola)

Instructions

  1. In a medium bowl, combine softened cream cheese, shredded cheddar, crumbled bacon, and minced jalapeños. Mix well and set aside.
  2. Trim excess fat from chicken breasts. Place between plastic wrap and pound to 1/4 inch thickness.
  3. Place a spoonful of cheese mixture in the center of each chicken piece. Roll tightly, tucking in sides, and secure with toothpicks if necessary.
  4. Set up a breading station with three shallow bowls: one with flour mixed with garlic and onion powder, one with beaten eggs, and one with panko mixed with salt and paprika.
  5. Dredge each chicken bite in flour, dip in egg wash, and press into panko breadcrumbs to coat evenly.
  6. Heat oil in a large skillet over medium-high heat. Fry bites in batches for 3-4 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  7. Remove from pan and drain on paper towels. Let rest for a minute before removing toothpicks and serving.

Notes

Ensure jalapeños are patted dry to prevent the chicken from unraveling. Pound chicken evenly for consistent cooking. Do not overcrowd the pan to maintain oil temperature and crispiness. For a lighter option, bake at 400°F (200°C) for 15-20 minutes, flipping halfway.
