Ingredients

  • Water Crackers (such as Ryvita or Triscuits) or sturdy gluten-free crackers
  • Sharp Cheddar Cheese, freshly grated
  • Pepperoni Slices (thinly sliced, regular or spicy)
  • Olive Oil (optional, for brushing)
  • Fresh Basil, chopped (optional, for garnish)
  • Red Pepper Flakes (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a rimmed baking sheet with parchment paper.
  3. Arrange the crackers in a single layer on the baking sheet, ensuring they do not overlap.
  4. Grate the cheddar cheese and sprinkle approximately 1 tablespoon over each cracker.
  5. Place one slice of pepperoni on each cracker. Trim larger slices if necessary to fit.
  6. Lightly brush the pepperoni with olive oil to help it crisp.
  7. Bake for 5-7 minutes, watching closely until the cheese is melted and the pepperoni edges are curled and golden.
  8. Remove from the oven and let cool on the sheet for 2 minutes to allow the cheese to set.
  9. Sprinkle with fresh basil or red pepper flakes if desired, and serve warm.

Notes

Grate your own cheese for better melting; pre-shredded cheese contains anti-caking agents. Use thin pepperoni slices for crispiness. Do not overcrowd the baking sheet to ensure even cooking and crispiness. Let stackers cool for 2 minutes before handling to prevent breaking. Store leftovers in an airtight container at room temperature for up to 2 days. Reheat in the oven at 350°F for 5 minutes to restore crunch.
