Crispy Pumpkin Snickerdoodle Cookies

Crispy Pumpkin Snickerdoodle Cookies - featured image

These cookies feature a stiff, chilled dough rolled in cinnamon sugar to create a fragile, glass-like shell that shatters when bitten, revealing a soft, spiced pumpkin center.

Ingredients

Scale
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon fine sea salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup 100% pure pumpkin puree (strained if watery)
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup granulated sugar (for coating)
  • 1 ½ teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt until lump-free.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium speed for 2-3 minutes until pale and fluffy.
  4. Add egg and vanilla extract, beating on low until combined. Add pumpkin puree and mix on low just until incorporated.
  5. Gradually add dry ingredients to wet ingredients, mixing on low until just combined. The dough should be stiff.
  6. Cover bowl with plastic wrap and refrigerate for at least 1 hour (up to 24 hours).
  7. Mix ½ cup granulated sugar and 1 ½ teaspoons cinnamon in a shallow bowl.
  8. Scoop tablespoon-sized portions of dough, roll into balls, and coat thoroughly in the cinnamon-sugar mixture.
  9. Place cookies on baking sheets, spaced 2 inches apart.
  10. Bake for 10-12 minutes until edges are set and lightly golden, but centers still look soft.
  11. Let cookies sit on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chilling the dough is non-negotiable for crispness. Do not overbake; cookies firm up as they cool. Store in an airtight container to maintain crunch. If using watery pumpkin puree, strain it through cheesecloth first.
