A simple, reliable recipe for pressure-cooking chicken breasts with pantry staples. This method yields tender, flavorful shredded chicken perfect for meal prep, burritos, salads, and tacos.

Ingredients

Scale
  • 2 to 3 pounds boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 large yellow onion, roughly chopped
  • 4 cloves garlic, smashed
  • 2 dried bay leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt

Instructions

  1. Rinse chicken breasts and pat dry. If uneven, pound to 1-inch thickness.
  2. Place chicken in the Instant Pot inner pot in a single layer.
  3. Pour chicken broth over the chicken.
  4. Scatter chopped onion, smashed garlic, and bay leaves over the top.
  5. Sprinkle smoked paprika, garlic powder, onion powder, black pepper, and salt evenly over everything.
  6. Secure the lid and turn the valve to the Sealing position.
  7. Select Manual or Pressure Cook button and set timer for 10 minutes on High Pressure (12-15 minutes if frozen).
  8. Allow pressure to release naturally for 10 minutes, then carefully vent remaining steam.
  9. Remove chicken and discard aromatics (onion, garlic, bay leaves).
  10. Shred chicken using two forks while warm.
  11. Return shredded chicken to the pot and toss with a few tablespoons of cooking liquid to keep moist.

Notes

Do not skip the natural release; it keeps the chicken juicy. Shred the chicken while it is still warm for easier handling. If using frozen chicken, add 5-10 minutes to the cook time. Adjust liquid if cooking at high altitudes.
