Easy Sheet Pan Sausage and Egg Breakfast Burritos

A quick and easy sheet pan breakfast recipe that yields pliable, golden tortillas filled with savory sausage, fluffy eggs, and melted cheese. Perfect for busy mornings and meal prep.

  • 1 pound bulk pork sausage (mild or Italian)
  • 8 large eggs
  • 1/4 cup whole milk or heavy cream
  • 1 cup shredded sharp cheddar or Mexican blend cheese
  • 6 to 8 large burrito-sized flour tortillas
  • 2 tablespoons unsalted butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a large half-sheet baking pan with aluminum foil.
  2. Place bulk sausage on the prepared baking sheet. Break into small pieces and spread in an even layer. Bake for 10 minutes, stirring halfway through, until browned and cooked through.
  3. While sausage cooks, whisk eggs, milk/cream, salt, and pepper in a large bowl until frothy.
  4. Remove pan from oven. Pour egg mixture evenly over the sausage, spreading to cover the surface.
  5. Return pan to oven and bake for 10-12 minutes until eggs are mostly set but still slightly jiggly.
  6. Lay tortillas on a counter and brush the top side lightly with melted butter.
  7. Remove pan from oven. Sprinkle cheese evenly over the egg and sausage mixture.
  8. Working quickly, place a tortilla over the filling and roll tightly. Transfer to a clean baking sheet seam-side down.
  9. Repeat with remaining tortillas. Brush tops with more butter.
  10. Bake for 5-7 minutes until tortillas are golden brown and crispy.
  11. Let rest for 1 minute before serving.

Notes

For best results, do not overcrowd the pan. Ensure vegetables are dried if added to prevent soggy tortillas. Let burritos rest after baking to allow cheese to set. Can be frozen for up to 3 months.
