These fluffy sourdough pumpkin waffles use an active starter for superior texture and tang, balanced with warm spices and pumpkin puree for a comforting autumn breakfast.

Ingredients

Scale
  • 1 cup (240g) active sourdough starter
  • 1/2 cup (120g) pumpkin puree
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) milk (whole, almond, or oat)
  • 3 tablespoons (42g) melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoon pumpkin pie spice

Instructions

  1. In a medium mixing bowl, whisk together the active sourdough starter, pumpkin puree, eggs, milk, melted butter, and vanilla extract until smooth and uniform.
  2. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and pumpkin pie spice.
  3. Pour the dry ingredients into the wet ingredients and gently fold together with a spatula until just moistened. The batter will be thick and slightly lumpy; do not overmix.
  4. Let the batter rest for 5 minutes to allow the flour to hydrate.
  5. Preheat a waffle iron to medium-high heat and lightly grease the plates.
  6. Pour approximately 1/2 cup of batter onto the center of the waffle iron.
  7. Close the lid and cook for 3-4 minutes, or until steam stops escaping and the waffle is golden brown.
  8. Remove waffles with a fork or tongs and serve immediately.

Notes

Ensure sourdough starter is bubbly and active. Do not overmix the batter to avoid tough waffles. Keep cooked waffles warm in a 200°F oven on a wire rack to maintain crispness. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, swap milk and butter for plant-based alternatives.
