A light and festive salad featuring caramelized grilled peaches, creamy burrata, and peppery arugula, finished with a honey-balsamic dressing. Perfect for ending summer on a high note.

Ingredients

Scale
  • 4 medium ripe yellow peaches, halved and pitted
  • 1 ball fresh burrata cheese
  • 4 cups young tender arugula
  • 1 cup loosely packed fresh basil leaves, torn
  • 1/2 cup toasted pine nuts or walnuts
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • Sea salt and freshly cracked black pepper

Instructions

  1. Preheat grill to medium-high heat and brush grates with olive oil.
  2. Wash, dry, and halve the peaches, removing pits. Leave skins on.
  3. Place peach halves cut-side down on the grill and cook for 2-3 minutes until char marks appear and fruit softens. Remove and let cool slightly, then slice into wedges.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper to make the dressing.
  5. In a large bowl, toss arugula and basil with half of the dressing until lightly coated.
  6. Arrange dressed greens on a serving platter.
  7. Top greens with grilled peach wedges.
  8. Break burrata into large chunks and scatter over the peaches.
  9. Drizzle with remaining dressing, sprinkle with toasted nuts and flaky sea salt.
  10. Serve immediately.

[‘Use ripe but firm peaches that yield slightly to pressure.’, ‘Add burrata just before serving to prevent it from becoming too runny.’, ‘Toast nuts in a dry pan for 2 minutes to enhance flavor.’, ‘Season peaches lightly with salt before grilling to bring out sweetness.’, ‘If no grill is available, use a cast-iron skillet or grill pan.’, ‘Store components separately; do not freeze.’]
