A stress-free, creamy chia pudding made with almond milk, maple syrup, and vanilla. This make-ahead breakfast is ready in minutes and keeps fresh for up to five days in the fridge.

  • 1 1/2 cups unsweetened almond milk
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup frozen mixed berries

Instructions

  1. In a medium mixing bowl, combine almond milk, maple syrup, vanilla extract, and cinnamon. Whisk vigorously for about 30 seconds until fully dissolved.
  2. While whisking continuously, slowly pour in the chia seeds to prevent clumping. Continue whisking for another 30 seconds to disperse seeds evenly.
  3. Let the mixture sit for 5 minutes, then stir again with a spoon to ensure even hydration and prevent clumps.
  4. Pour the mixture evenly into 4-6 glass jars, filling each about 3/4 full.
  5. Cover jars tightly with lids or plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  6. Check consistency after 4 hours; add a splash of milk if too thick or let sit longer if too thin.
  7. Top with frozen berries or other desired toppings just before eating.

Notes

Stir the mixture twice: once when mixing and once after 5 minutes to prevent clumping. Use cold milk for best texture. Chia pudding thickens over time; add a splash of milk before eating on later days. Frozen berries are recommended as they thaw in the fridge and flavor the pudding.
