A quick and elegant summer salad featuring charred, sweet peaches paired with creamy burrata cheese, fresh basil, and a tangy balsamic glaze. This dish is perfect for weeknight dinners or entertaining.

Ingredients

Scale
  • 4 medium-to-large ripe peaches (yellow-fleshed preferred)
  • 1 ball (7 oz) fresh burrata cheese
  • 1 generous handful fresh basil leaves (Genovese basil)
  • 23 tablespoons high-quality balsamic glaze
  • 2 tablespoons extra virgin olive oil (divided)
  • Flaky sea salt (e.g., Maldon)
  • Freshly cracked black pepper

Instructions

  1. Wash peaches thoroughly. Cut each peach in half and remove the pit.
  2. Place peach halves in a bowl and drizzle with 1 tablespoon of olive oil. Toss to coat and sprinkle with a pinch of salt.
  3. Preheat grill to medium-high heat (400-450°F / 200-230°C).
  4. Place peach halves cut-side down on the grill. Do not move for 3-4 minutes until distinct char marks appear.
  5. Flip peaches and grill skin-side for another 1-2 minutes until tender but not falling apart. Remove and let cool slightly.
  6. While peaches grill, remove burrata from fridge and drain excess whey just before serving.
  7. Slice grilled peach halves into wedges or chunks.
  8. Arrange peaches around the burrata on a serving platter.
  9. Tear fresh basil leaves by hand and scatter over the peaches and cheese.
  10. Drizzle with remaining olive oil and balsamic glaze.
  11. Finish with freshly cracked black pepper and a sprinkle of flaky sea salt.
  12. Serve immediately to enjoy the contrast of hot peaches and cold cheese.

Notes

If you don’t have a grill, you can use an oven broiler for 3-4 minutes. For a dairy-free option, swap burrata for avocado or cashew cheese. Do not freeze this salad as the texture will be ruined. Store leftovers separately in the refrigerator for up to 2 days.
