Tender Crockpot Chicken Chili Verde

A flavorful and tender slow cooker chicken chili verde that balances the tartness of tomatillos with rich spices. This easy ‘set it and forget it’ recipe yields bright, herbal flavors and perfectly shredded chicken.

  • 2 boneless, skinless chicken breasts
  • 1 medium white onion, diced
  • 4 cloves garlic, minced
  • 2 cups salsa verde (jarred)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 14.5-ounce can low-sodium chicken broth
  • 4-ounce can diced green chiles, drained
  • 15-ounce can corn, drained
  • 15-ounce can black beans, rinsed and drained
  • Juice of 1 large lime
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Avocado, diced (for garnish)
  • Sour cream or Greek yogurt (for garnish)

Instructions

  1. Dice the white onion and mince the garlic. Place them in the bottom of a 6-quart slow cooker insert.
  2. Place the chicken breasts on top of the onion and garlic layer. If breasts are large, cut them in half to fit in a single layer.
  3. Pour the salsa verde and chicken broth over the chicken. Ensure the liquid mostly covers the chicken.
  4. Sprinkle the ground cumin and dried oregano evenly over the liquid.
  5. Cover and cook on LOW for 6 to 8 hours until the chicken is tender. Avoid using HIGH heat to prevent tough meat.
  6. Add the drained black beans, corn, and diced green chiles to the pot. Stir gently and cook for another 30 minutes on LOW.
  7. Remove the chicken breasts and shred them using two forks or a potato masher. Return the shredded chicken to the pot.
  8. Stir in the lime juice. Taste and add salt and pepper as needed. Let sit for 10 minutes before serving.
  9. Serve hot, topped with fresh cilantro, diced avocado, and sour cream or Greek yogurt.

Notes

For a thicker chili, mash some of the beans against the side of the pot. If using frozen chicken, add 30-60 minutes to the cooking time. Ensure chicken reaches an internal temperature of 165°F. The flavors improve after sitting in the fridge for a day.
