A quick, healthy, and flavorful roasted delicata squash dish that requires no peeling. Caramelized with maple syrup and smoked paprika, this simple meal is perfect for busy weeknights and offers deep comfort food satisfaction.

Ingredients

Scale
  • 2 medium delicata squash
  • 1/4 cup real maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons fresh sage or thyme (optional)
  • 2 tablespoons pumpkin seeds or pepitas (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub the delicata squash under cold water. Slice it in half lengthwise and scoop out the seeds.
  3. Slice each half into half-inch thick half-moons, keeping pieces uniform for even cooking.
  4. In a large bowl, toss squash slices with olive oil, maple syrup, smoked paprika, garlic powder, salt, and pepper until glossy.
  5. Line a large rimmed baking sheet with parchment paper. Spread squash in a single layer, ensuring pieces are not touching.
  6. Roast for 15 minutes, then remove and flip the pieces.
  7. Roast for another 10-15 minutes until edges are browned and squash is tender when pierced with a fork.
  8. If using fresh herbs or pumpkin seeds, sprinkle them over the squash in the last 2-3 minutes of cooking.
  9. Remove from oven, taste and adjust salt if needed, and serve immediately while warm.

Notes

Do not peel the delicata squash as the skin is edible and becomes tender when roasted. Ensure squash is in a single layer to prevent steaming. If the maple syrup browns too quickly, loosely tent the pan with foil. The flavors improve after a day or two in the fridge.
