Delicate, crispy meringue cookies shaped like ghosts, perfect for Halloween. Made with just a few simple ingredients, these treats offer a satisfying snap and melt-in-your-mouth texture.

Ingredients

Scale
  • 3 large egg whites, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • Pinch of fine sea salt
  • Black food gel (for decorating)
  • White icing pen (optional, for highlights)

Instructions

  1. Preheat oven to 200°F (95°C). Line baking sheets with parchment paper.
  2. Place egg whites in a clean, dry glass or metal mixing bowl. Add cream of tartar and salt.
  3. Whip on medium-low speed until foamy and bubbly (about 1 minute).
  4. With mixer running on medium speed, slowly add sugar, one tablespoon at a time.
  5. Increase speed to medium-high and whip for 5-7 minutes until stiff, glossy peaks form. Test by turning bowl upside down; meringue should not move.
  6. Add vanilla extract and cornstarch. Mix on low speed just until combined.
  7. Transfer mixture to a piping bag fitted with a large round tip.
  8. Pipe ghost shapes onto prepared baking sheets, leaving 2 inches between each.
  9. Bake for 1.5 to 2 hours until dry to the touch and easily lifted from parchment.
  10. Turn off oven and let meringues cool completely inside with the door slightly ajar.
  11. Decorate with black food gel for eyes and mouths. Let decorations dry for 10 minutes before serving.

Notes

Ensure all equipment is completely clean and dry, free of grease or yolk, to ensure proper whipping. Egg whites must be at room temperature. Do not rush the baking process; low and slow is key to preventing browning and ensuring crispness. Store in an airtight container away from humidity.
