A simple 5-ingredient recipe for perfectly crispy baked chicken wings with a sticky, sweet, and savory honey garlic glaze. The secret is baking the wings first to crisp the skin before tossing them in the warm sauce.

Ingredients

Scale
  • 2 to 3 lbs chicken wings (split into drumettes and flats)
  • Cornstarch (for coating)
  • Kosher salt
  • Freshly cracked black pepper
  • Honey (clover or wildflower)
  • Soy sauce
  • 4 to 5 cloves fresh garlic, minced
  • 1 tsp toasted sesame oil
  • Red pepper flakes (optional, for heat)

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper and place a wire rack on top.
  2. Pat chicken wings thoroughly dry with paper towels to remove excess moisture.
  3. Season wings with salt and pepper, then toss with cornstarch until lightly coated. Shake off any excess cornstarch.
  4. Arrange wings in a single layer on the wire rack, ensuring they are not touching.
  5. Bake for 25 minutes.
  6. Flip the wings and bake for another 15 minutes until golden brown and crispy. Optionally broil for 2 minutes for extra crispness, watching closely to prevent burning.
  7. While wings bake, combine honey, soy sauce, minced garlic, sesame oil, and red pepper flakes in a small saucepan. Heat over medium-low for 2 minutes to warm and dissolve, but do not boil.
  8. Transfer hot wings to a large mixing bowl.
  9. Pour the warm sauce over the wings and toss gently to coat evenly.
  10. Serve immediately while crispy.

Notes

Patting the wings dry is crucial for crispiness. Do not crowd the pan; wings must have space to air circulate. Always warm the sauce before tossing to prevent steaming the wings. If you don’t have a wire rack, bake directly on the sheet and flip halfway through. For gluten-free, use tamari instead of soy sauce.
